I have a real comfort food that I love having at Christmas. It’s a rather bizarre recipe that my family makes and I have no idea who thought it up! Maybe one of those days when there was little in the cupboard and you made do with whatever was there from the Christmas left overs.
Christmas pasta
At Christmas, we save the stock from the meats (turkey & ham).
We put it in a pan with hot water and tomato puree and cook pasta in it! It’s delicious and flavoursome and salty.
We tend to call it “Christmas pasta” but I also have it at other times of the year when I want some comfort food.
What about you? Does your family have any unusual ideas for using up leftovers?
Emily introduced me to this simple yet satisfying culinary delight 20 years ago, grate a little cheese on top for added comfort factor. Merry Christmas!
